Sizzling Carrot Garbanzo Bean Salad



1 lb bag of carrots

1 large onion

1/4 cup olive oil

1 tsp minced garlic (fresh)

1 (14.5 oz can) garbanzo beans (AKA chick peas)

1/4 cup chopped fresh parsley

1 Tbsp balsamic vinegar or red wine vinegar

Salt and Pepper to taste (about 1/2 tsp each)


Peel and thinly slice carrots in food processor. An easy substitute are the 1 lb presliced carrots at the grocery store.  

Saute carrots and onion in large skillet or wok with olive oil until carrots and onion are soft. Add garlic and garbanzo beans and cook another 1-2 minutes. Add parsley, vinegar, salt and pepper. Mix well and serve hot.
